3 Simple Iron-Rich Mason Jar Recipes for Pregnancy (Easy & Healthy)

During pregnancy, getting enough iron is extremely important for both the mother and the baby. Iron helps produce hemoglobin, which carries oxygen throughout the body. When iron levels are low, it can lead to anemia during pregnancy.

In my own pregnancy journey, I discovered how important iron-rich foods are when my hemoglobin dropped during the third trimester. By improving my diet and following advice from Klinik Kesihatan, I was able to recover naturally.

If you want to read more about my experience, you can check my article about my pregnancy anemia journey and how I improved my hemoglobin naturally.

One of the easiest ways I found to maintain a healthy diet was preparing nutritious mason jar meals. They are simple, quick to prepare, and perfect for busy moms.

Here are three iron-rich mason jar recipes that are pregnancy friendly and easy to make.

Recipe 1: Beetroot & Spinach Iron Boost Jar

Why This Is Good for Pregnancy

Beetroot and spinach are good sources of iron, which helps support healthy hemoglobin levels during pregnancy. Spinach also provides folate, an important nutrient for your baby’s development. Adding calamansi or lemon juice gives vitamin C, which helps the body absorb iron better.

Ingredients

  • ½ cup grated beetroot
  • ½ cup chopped spinach
  • 5–6 sliced cherry tomatoes
  • 1 tablespoon crushed nuts
  • A few drops of calamansi or lemon juice

Preparation

Start by placing the grated beetroot at the bottom of the mason jar. Add a layer of fresh chopped spinach, followed by the sliced cherry tomatoes. Sprinkle the crushed nuts on top for extra nutrients and crunch. Finish with a few drops of calamansi or lemon juice to enhance flavor and improve iron absorption.

This refreshing jar can be eaten as a morning snack or afternoon energy booster.

Recipe 2: Kale Egg Protein Jar

Why This Is Good for Pregnancy

Kale is rich in iron and folate, which support healthy blood levels and your baby’s development. Eggs provide high-quality protein and essential nutrients that help maintain energy and support your body during pregnancy.

Ingredients

  • 1 boiled egg (sliced)
  • ½ cup chopped kale
  • ½ cup diced cucumber
  • 1 tablespoon olive oil
  • A pinch of sesame seeds

Preparation

Place the chopped kale at the bottom of the mason jar. Add the diced cucumber on top for freshness and crunch. Layer the sliced boiled egg, then drizzle olive oil over the ingredients. Finish by sprinkling a pinch of sesame seeds for extra nutrients and flavor.

Mix lightly before eating and enjoy as a nutritious snack or light lunch during pregnancy.

Recipe 3: Blueberry & Pomegranate Yogurt Energy Jar

Why This Is Good for Pregnancy

Blueberries and pomegranates are rich in antioxidants and nutrients, while yogurt provides calcium and protein. This combination makes a refreshing and nourishing snack that helps support energy and overall health during pregnancy.

Ingredients

  • ½ cup yogurt
  • 3 chopped dates
  • ½ Blueberries
  • ½ cup pomegranate seeds
  • 1 tablespoon crushed pistachios and almonds

Preparation

Add yogurt to the bottom of the mason jar. Layer the chopped dates, followed by blueberries and pomegranate seeds. Sprinkle the crushed pistachios and almonds on top for added texture and nutrients.

This jar can be enjoyed as a quick breakfast or healthy snack for pregnant mothers.
